Caliper CBD Spring Salad
Makes 4 servings / 20 mg CBD per serving
1 small bunch asparagus
2 cups baby arugula or spinach
1 (11-ounce) can mandarin oranges, drained
¼ cup freshly squeezed lemon juice
¼ cup extra-virgin olive oil
4 (20mg) packets Caliper CBD dissolvable powder
1 teaspoon maple syrup
Salt and freshly ground pepper, to taste
1 handful shredded vegan mozzarella-style cheese
1 handful slivered almonds
Using a vegetable peeler, shave the asparagus lengthwise to create strips (leave some tips whole, if you like, for contrast). Toss in a serving bowl with the arugula and orange segments.
Combine the lemon juice, oil, Caliper, syrup, salt and pepper in a small jar and shake well. Pour over the salad and toss gently to coat. Top with the shredded vegan cheese and slivered almonds.
