Serves 2, 20 mg CBD each
Intrepid hikers and campers, Technical Project Manager Marian Van Vlack and Territory Manager Shuang Han know a great camping recipe when they see one. They recently tested this super-easy, super-satisfying one-pot dinner on a recent trip to Blue Mesa Reservoir. Adding a little Caliper CBD helped soothe aching muscles as they relaxed under a starry Colorado sky.

3 cloves garlic
2 tablespoons olive oil
1 (14-ounce) can halved artichoke hearts, drained
1 (12-ounce) can chicken breast, drained and flaked
2 cups water
1 (4-ounce) packet instant mashed potatoes
2 (20mg) packets Caliper CBD dissolvable powder
1 lemon, cut into wedges
Salt to taste
Finely chop scallions and garlic.
Set your camp stove to medium heat. In a medium skillet or pot, heat oil, then add scallions and garlic and sauté 2 minutes. Stir in artichoke hearts, chicken, and water; simmer 3-4 minutes or until heated through.
Stir in mashed potatoes, and continue cooking according to package directions, stirring gently.
Stir in Caliper and a good squeeze of lemon juice, and season to taste with salt. Serve each portion garnished with a lemon wedge
